Peas (2060)

It's a snap to freeze sugar snap peas! Use freshly picked young and tender sugar snap peas for freezing. Over-mature pods may be stringy or dry after freezing. If you cannot freeze the pods immediately after picking, refrigerate them for no longer than a day. Wash the pods and cut off the stem with a sharp knife, if you prefer. Blanch the pods in boiling water for two minutes. Chill them immediately in ice cold water. Drain them and pack into freezer containers or freezer bags. Seal them, label and freeze.
